Ingredients

Main Ingredients
  • 16 oz kielbasa or smoked sausage Juicy and flavorful for a hearty touch.
  • 10.75 oz condensed cheddar cheese soup Provides a creamy and rich base.
  • 1/4 cup caramelized onions Optional but adds lots of flavor.
  • 4 large potatoes Pare and cut into chunks.
  • 1 cup milk Adds creaminess.
  • 1 1/2 cups shredded cheese Divided for topping.
  • 1/2 tsp pepper Enhances overall flavor.

Method

Preparation
  1. Partially cook the potatoes by boiling the chunks until just tender, about 5-7 minutes. Drain and set aside.
Cooking
  1. If grilling, use a flame-proof ceramic or metal baking dish. Cover with aluminum foil and place on the unlit side of the grill for approximately 1.5 to 2 hours.
  2. Preheat your oven to 350°F (175°C). Lightly spray a 2.5-quart (11x7) baking dish with non-stick spray.
  3. Cut the kielbasa into pieces about 1/2-inch thick and set aside.
  4. In a large bowl, combine the cheddar cheese soup and milk, stirring to create a smooth mixture.
  5. Stir in the potatoes, pepper, caramelized onion (if using), 1 cup of shredded cheese, and chopped kielbasa. Mix thoroughly.
  6. Transfer the mixture into your prepared baking dish.
  7. Bake uncovered for 45 minutes, stirring halfway through.
  8. Remove from the oven and sprinkle the remaining cheese on top. Return to the oven and bake for an additional 15 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

Partially cooking the potatoes is crucial for even cooking. Feel free to add vegetables like broccoli or bell peppers for extra nutrition. This casserole makes great leftovers; reheat in the oven or microwave.
