Preparation
- Preheat your oven to 400°F (200°C). Lightly coat a 2-quart baking dish with nonstick spray and set it aside.
- In a small microwave-safe bowl, combine the diced onion and minced garlic. Cover with plastic wrap, leaving a small slit to vent. Microwave for about 1 minute, then remove and let it cool slightly.
Mixing Chicken Mixture
- In a large mixing bowl, combine the cubed chicken, chicken bouillon, sour cream, milk, kosher salt, fresh ground pepper, and the steamed onions and garlic. Mix until well incorporated.
- Fold in the grated cheddar cheese, ensuring it’s evenly distributed throughout the chicken mixture. Spread this mixture evenly in the prepared baking dish and set aside.
Cornbread Topping
- In the same bowl, mix together the cornbread mix, melted butter, creamed corn, and egg until smooth and combined.
- Spread this cornbread mixture over the chicken layer in your baking dish, smoothing it out evenly.
Baking
- Bake in the preheated oven for about 35-40 minutes, or until the center of the cornbread topping is set and golden brown.
- After baking, let the casserole cool for about 10 minutes before serving.
- Optionally, garnish with chopped green onions for added color and crunch.
Notes
For an extra punch of flavor, consider adding spices like paprika, cumin, or even chopped jalapeños to the chicken mixture. Cover with foil during the first part of baking for moisture, uncovering for the last 10-15 minutes for a golden crust. Using leftover rotisserie chicken can save time and add depth of flavor.
