Mixing Chicken Mixture

  2. Spread this cornbread mixture over the chicken layer in your baking dish, smoothing it out evenly.
Baking
  1. Bake in the preheated oven for about 35-40 minutes, or until the center of the cornbread topping is set and golden brown.
  2. After baking, let the casserole cool for about 10 minutes before serving.
  3. Optionally, garnish with chopped green onions for added color and crunch.

Notes

For an extra punch of flavor, consider adding spices like paprika, cumin, or even chopped jalapeños to the chicken mixture. Cover with foil during the first part of baking for moisture, uncovering for the last 10-15 minutes for a golden crust. Using leftover rotisserie chicken can save time and add depth of flavor.
