Method

Marinate the Chicken

  2. Pour this mixture into a freezer bag and add the chicken breasts.
  3. Seal the bag while pressing out any excess air, then massage the marinade into the chicken.
  4. Place it in the refrigerator for at least 1-2 hours, or overnight for more flavor.
Grill the Chicken
  1. Preheat your grill to 400° F and oil the grates.
  2. Place the marinated chicken on the grill and cook for about 6-8 minutes on one side.
  3. Flip and grill for another 6-8 minutes until the internal temperature reads 165° F.
  4. Allow the chicken to rest for 5 minutes before dicing or slicing it for serving.
Prepare the Avocado Sauce
  1. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, chopped cilantro, and a pinch of salt.
  2. Blend until smooth; add water if needed to adjust consistency.
  3. Taste and adjust seasoning as preferred.
Assemble the Bowls
  1. Add 1/2 cup of cooked rice to each serving bowl.
  2. Evenly distribute the diced chicken, black beans, and roasted sweet potatoes over the rice.
  3. Spoon the creamy avocado sauce on top or serve it on the side.

Notes

Marinate overnight for optimal flavor and tenderness. Feel free to add diced bell peppers or other veggies. You can also pan-sear or bake the chicken if a grill isn't available.
