Ingredients

For the Jam
  • 3 pounds yellow peaches, peeled, pitted, and finely chopped (about 4 to 4½ cups) Fresh peaches provide a sweet and tangy flavor.
  • 5.5 cups sugar Essential for sweetness and preservation.
  • 2 tablespoons fresh lemon juice Adds zest and brightness.
  • 0.5 teaspoon butter Helps reduce foaming.
  • 1 box fruit pectin (1.75 ounce/49 gram box of original Sure-Jell powdered pectin) Brings the jam together.

Method

Preparation
  1. Place the finely chopped peaches and lemon juice into a large pot. Mash the peaches slightly with a potato masher to release more juice.
  2. Measure out the sugar in a separate bowl and set it aside.
Cooking
  1. Stir in the fruit pectin and butter into the pot of peaches. Mix well.
  2. Bring the peach mixture to a full rolling boil while stirring frequently.
  3. Quickly add the sugar and stir until fully incorporated.
  4. Bring the mixture back to a full, rolling boil and cook for exactly 1 minute while stirring constantly.
  5. Remove from heat and skim off any foam on the surface.
Canning
  1. Ladle the hot jam into clean jars using a wide funnel.
  2. Wipe the rims of the jars and place heated lids on top, tightening the bands securely.
  3. Process the jars in a canner for 10 minutes, ensuring that the water covers them by an inch.
  4. Remove jars and let them cool completely. Check that lids have sealed properly.

Notes

Consider using a blend of peaches for more flavor, or a dash of cinnamon for warmth. For smoother jam, blend the peach mixture before cooking. Always ensure proper sealing.
