Preparation
- Place the finely chopped peaches and lemon juice into a large pot. Mash the peaches slightly with a potato masher to release more juice.
- Measure out the sugar in a separate bowl and set it aside.
Cooking
- Stir in the fruit pectin and butter into the pot of peaches. Mix well.
- Bring the peach mixture to a full rolling boil while stirring frequently.
- Quickly add the sugar and stir until fully incorporated.
- Bring the mixture back to a full, rolling boil and cook for exactly 1 minute while stirring constantly.
- Remove from heat and skim off any foam on the surface.
Canning
- Ladle the hot jam into clean jars using a wide funnel.
- Wipe the rims of the jars and place heated lids on top, tightening the bands securely.
- Process the jars in a canner for 10 minutes, ensuring that the water covers them by an inch.
- Remove jars and let them cool completely. Check that lids have sealed properly.
Notes
Consider using a blend of peaches for more flavor, or a dash of cinnamon for warmth. For smoother jam, blend the peach mixture before cooking. Always ensure proper sealing.
