Ingredients

For the Crust
  • ½ cup all-purpose flour This light flour creates a soft yet crisp base.
  • ½ teaspoon baking powder This will give your crust that desired fluffiness.
  • ½ teaspoon sea salt A necessary touch of flavor to balance the dough.
  • ½ cup 2% blended cottage cheese (or plain Skyr yogurt, or Greek yogurt) This ingredient lends a creamy texture and boosts protein.
For Topping
  • ⅓ cup pizza sauce A flavorful, tangy element that will complement the crust.
  • ½ cup shredded mozzarella cheese Adds gooey, melty goodness.
  • 1 tablespoon grated parmesan cheese Provides a savory, salty kick.
  • 1 oz. sliced pepperoni Adds a satisfying crunch.

Method

Preparation
  1. Preheat your oven to 425°F.
  2. Spray a baking sheet with cooking spray and set aside.
  3. In a mixing bowl, combine flour, baking powder, salt, and cottage cheese (or yogurt). Stir until well combined.
  4. Use your hands to press the mixture together until a ball forms.
  5. Transfer the dough to a floured work surface and knead a few times until smooth.
  6. Roll out the dough to form a thin crust approximately 10 inches round or ⅛ inch thick.
  7. Carefully move your rolled-out crust onto the prepared baking sheet.
Baking
  1. Bake in the preheated oven for about 10 minutes to parbake the crust.
  2. Remove from the oven and top with pizza sauce, mozzarella cheese, parmesan cheese, and sliced pepperoni.
  3. Return to the oven and bake for an additional 7-8 minutes or until the bottom starts to brown and the cheese is bubbling.
  4. Sprinkle with crushed red pepper if desired, slice, and enjoy!

Notes

For a crispier crust, roll the dough thin enough and keep an eye on it during baking. Experiment with different toppings, or substitute with gluten-free flour for a gluten-free version.
