Preparation
- Preheat your oven to 375°F (190°C).
- Spread the diced bread on a dry sheet pan, and bake for 10-15 minutes until slightly golden and dried out.
- In a large stock pot, add 2 tablespoons of butter and sauté the small diced celery and onions with 1/2 teaspoon of salt for about 5-7 minutes until they begin to soften.
- In a separate pot, combine the chicken stock and the remaining 4 tablespoons of butter, heating until the butter has melted.
- Once the bread is toasted, add it to the pot with the sautéed celery and onions, gently folding everything together.
- Introduce the heavy cream into the mixture, folding in gently, then mix in the eggs, quartered chestnuts, chopped herbs, and remaining salt.
- Spray a 9×13 inch baking dish with cooking spray, then pour the stuffing mixture into the dish and place a few pats of butter on top.
Baking
- Bake the dish in the oven for 45-55 minutes until golden brown on top and no longer jiggles in the center.
- Let the stuffing cool for a few minutes before serving.
Notes
For best flavor, consider using a combination of fresh herbs. You can add sautéed mushrooms for an earthy twist or dried cranberries for a hint of sweetness. Adjust the salt according to your preference. For a crunchier texture, toast the bread a little longer.
