Method
Preparation
- Wash the crabapples thoroughly, remove stems and cut off the flower end, and slice the crabapples in half.
- Measure out 4 cups of your trimmed and halved crabapples.
Cooking
- Place the prepared crabapples in a 2-quart saucepan, add sugar and water, and stir gently.
- Put the saucepan over medium heat, stirring occasionally, and watch the mixture come to a simmer.
- Reduce the heat to medium-low and continue to simmer for about 5 minutes.
- Pour the mixture through a metal mesh strainer, gently pressing the fruit with a spoon to extract more liquid.
- Use a food mill to create crabapple puree from the leftover apples.
Cooling and Storage
- Pour the freshly strained syrup into a clean jar and allow it to cool completely at room temperature.
- Store the cooled syrup in the refrigerator, where it can last for 1-2 weeks.
Notes
Use fresh crabapples for richer flavor. You can add cinnamon or vanilla during cooking for added flavor. Adjust sweetness based on preference.
