Method
Preparation
- Season the chicken breasts with garlic salt, pepper, and 1/2 teaspoon of Italian seasoning.
- Heat 2 tablespoons of butter in a large skillet over medium-high heat. Once melted and bubbling, add the seasoned chicken breasts.
- Cook for about 5 minutes on each side, or until golden brown and juices run clear. Remove chicken and set aside.
Cooking
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.
- Add minced garlic, chopped shallots, and halved cherry tomatoes. Sauté for 5-8 minutes, until tomatoes soften and release juices.
- Stir in chicken stock, heavy cream, grated parmesan, and remaining 1/2 teaspoon of Italian seasoning. Stir until cheese melts and sauce is velvety.
- Add baby spinach and cook for 1-2 minutes, until wilted.
- Return cooked chicken to skillet and spoon the sauce over each piece. Garnish with extra parmesan cheese before serving.
Notes
Season well to maximize flavor; use fresh ingredients for a better sauce. Browning the chicken enhances flavor. For a lighter version, substitute half of the heavy cream with low-fat milk or Greek yogurt.
