  • 1 lb chicken breasts or cubed cooked chicken Provides a succulent base for your dish.
Fruits and Vegetables
  • 1/2 cup red grapes Adds a burst of sweetness and juiciness.
  • 1/4 cup celery, diced For refreshing and crisp texture.
  • 1/4 cup green onions, diced Imparts a mild onion flavor.
  • 1/4 cup granny smith apple, diced Introduces a tartness that balances sweetness.
Nuts and Dressing Ingredients
  • 1/3 cup sliced almonds Lends a delightful crunch.
  • 1/3 cup mayonnaise Creates a creamy dressing.
  • 2 tablespoons sour cream Adds tangy creaminess.
  • 1 1/2 teaspoons curry Provides warm and aromatic essence.
  • 1 teaspoon turmeric Contributes color and earthy flavor.
  • 1/2 teaspoon ground ginger Adds a touch of spice.
  • 1/4 teaspoon salt Adjusts overall taste.

Method

Preparation
  1. Begin by adding the chicken breasts to a pot filled with water. Bring the water to a boil, then reduce it to a simmer. Allow the chicken to cook for 10-15 minutes or until it reaches an internal temperature of at least 165° F.
  2. While the chicken is cooking, combine all the dressing ingredients—including mayonnaise, sour cream, curry, turmeric, ginger, and salt in a mixing bowl. Mix well and set aside.
  3. Dice the celery, green onions, and green apple. Toss these into a medium-sized bowl along with the halved red grapes.
  4. Heat a small pan over medium heat and toast the sliced almonds for 1-2 minutes, stirring constantly.
Combining Ingredients
  1. Once the chicken has finished poaching, cool slightly, cube, and add it to the bowl with the grapes, vegetables, and toasted almonds.
  2. Pour the prepared dressing over everything and mix well until evenly coated.
Serving
  1. Serve the salad in sandwiches, with crackers, or as lettuce wraps.

Notes

Consider using rotisserie chicken for a quicker option. Adjust spice levels with curry or cayenne pepper. For added creaminess, a dab of Greek yogurt can enhance the dressing.
