Method

Preparation
  1. Soak the Cashews: Start by adding the raw cashews to a large glass dish. Pour in hot water until the cashews are fully submerged. Cover and let them soak for 30 minutes.
  2. Preheat the Oven: While the cashews are soaking, preheat your oven to 350°F (175°C). Prepare your baking dish or oven-safe skillet by greasing it lightly.
Blend Ingredients
  1. Drain and Blend: After 30 minutes, drain the soaked cashews and transfer them to a high-powered blender. Add the almond milk, buffalo sauce, light mayo, dairy-free ranch dressing, nutritional yeast, vinegar (or lemon juice), and garlic powder.
  2. Blend to Perfection: Blend on high until completely smooth. Adjust creaminess with more almond milk if necessary.
Combine and Bake
  1. Combine with Chicken: Transfer the blended mixture to a bowl and gently stir in the shredded or chopped chicken until well-combined.
  2. Bake the Dip: Spread the buffalo chicken mixture evenly in the prepared baking dish. Bake for about 20 minutes, until heated through and bubbling.
Finalize and Serve
  1. Final Touches: Drizzle a bit more ranch dressing on top and sprinkle with chopped green onions.
  2. Serve and Enjoy: Serve warm with veggie sticks, tortilla chips, or crackers.
