Method
Preparation
- Start by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet to pound them to an even thickness of 1/2 inch. If preferred, slice the breasts horizontally into halves.
- In a bowl, sift together the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage, paprika, and cayenne pepper.
- In another bowl, whisk together the eggs and water until well combined.
Coating and Frying
- Season the chicken breasts generously with salt and pepper.
- Dip each breast into the flour and spice mixture, then into the egg wash, and finally back into the flour mix. Ensure pressing the mixture into the chicken to maximize adhesion.
- Heat a skillet on medium, adding about half an inch of canola oil. Fry the chicken pieces gently for about 4-5 minutes on each side until golden brown and crispy.
Sauce and Serving
- In a medium saucepan, heat the olive oil and add the minced garlic, cooking until softened.
- Stir in honey, soy sauce, and black pepper, simmering for 5-10 minutes until slightly thickened.
- Allow the fried chicken to drain on a wire rack for a couple of minutes before dipping them in the honey garlic sauce.
- Enjoy with noodles or rice for a comforting meal.
Notes
For those preferring a healthier version, try the baked method by preheating the oven to 425°F while preparing the chicken, maintaining space between pieces, and baking for 15 minutes before flipping and cooking for another 10-15 minutes. Consider garnishing with chopped green onions or sesame seeds.
