Ingredients

Chicken and Coating
  • 4 large boneless skinless chicken breasts These are the star of the dish, tender and juicy.
  • 2 cups flour Forms the perfect crispy coating.
  • 4 tsp salt Essential to season your chicken well.
  • 4 tsp black pepper Adds a hint of warmth.
  • 3 tbsp ground ginger For an aromatic and slightly spicy kick.
  • 1 tbsp freshly ground nutmeg Adds a comforting, warm flavor.
  • 2 tsp ground thyme Provides an earthy herbal note.
  • 2 tsp ground sage Gives depth and richness.
  • 1 tsp cayenne pepper Adds a subtle, fiery touch.
  • 2 tbsp paprika For color and a mild sweetness.
  • 4 large eggs Used for the egg wash to help the coating stick.
  • 8 tbsp water To mix with the eggs.
  • 2 tbsp olive oil For sautéing the garlic.
  • 3-4 cloves minced garlic Brings rich flavor.
  • 1 cup honey For sweetness and that sticky texture.
  • 1/4 cup low-sodium soy sauce Adds umami without overpowering.
  • 1 tsp ground black pepper To balance the sweetness.
  • enough for frying canola oil To achieve that crispy texture.

Method

Preparation
  1. Start by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet to pound them to an even thickness of 1/2 inch. If preferred, slice the breasts horizontally into halves.
  2. In a bowl, sift together the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage, paprika, and cayenne pepper.
  3. In another bowl, whisk together the eggs and water until well combined.
Coating and Frying
  1. Season the chicken breasts generously with salt and pepper.
  2. Dip each breast into the flour and spice mixture, then into the egg wash, and finally back into the flour mix. Ensure pressing the mixture into the chicken to maximize adhesion.
  3. Heat a skillet on medium, adding about half an inch of canola oil. Fry the chicken pieces gently for about 4-5 minutes on each side until golden brown and crispy.
Sauce and Serving
  1. In a medium saucepan, heat the olive oil and add the minced garlic, cooking until softened.
  2. Stir in honey, soy sauce, and black pepper, simmering for 5-10 minutes until slightly thickened.
  3. Allow the fried chicken to drain on a wire rack for a couple of minutes before dipping them in the honey garlic sauce.
  4. Enjoy with noodles or rice for a comforting meal.

Notes

For those preferring a healthier version, try the baked method by preheating the oven to 425°F while preparing the chicken, maintaining space between pieces, and baking for 15 minutes before flipping and cooking for another 10-15 minutes. Consider garnishing with chopped green onions or sesame seeds.
