Ingredients

Main Ingredients
  • 1.5 cups cooked chickpeas (rinsed and drained) Creamy and hearty, providing protein and fiber.
  • 2 medium carrots (shredded) Adds a sweet crunch and vibrant color.
  • 1 small red onion (finely chopped) Offers sharpness that balances well with sweetness.
  • 0.25 cups fresh parsley (finely chopped) Contributes a fresh, aromatic quality.
  • 0.25 cups chickpea flour (or wheat/oat flour) Acts as a binder for the patties.
  • 2 tablespoons aquafaba (or tap water) Helps to moisten the mixture.
  • 0.75-1 teaspoon salt Enhances flavors.
  • 0.5 teaspoon cumin powder Adds warmth and earthiness.
  • 0.5 teaspoon paprika Provides sweetness and color.
  • 0.5 teaspoon curry powder Adds an exotic twist.
  • 0.25 teaspoon ground black pepper Adds the right amount of heat.
  • 3-4 tablespoons extra virgin olive oil Essential for frying, for a crispy exterior.

Method

Preparation
  1. Mash the cooked chickpeas with a fork until mostly broken down but still maintaining some texture.
  2. Add the shredded carrots, chopped onion, parsley, chickpea flour, salt, and spices to the mashed chickpeas. Mix until evenly combined, preferably using your hands to knead the mixture.
  3. Form about ¼ cup of the mixture into patties. If the mixture feels crumbly, add a small amount of water, one teaspoon at a time.
Cooking
  1. Heat olive oil in a frying pan over medium heat. Once hot, add the chickpea patties and cook for about 3 minutes on each side until golden brown and crispy.
  2. Serve warm with a fresh salad and dipping sauce.

Notes

For added flavor, consider adding minced garlic or grated ginger. You can also mix in breadcrumbs for extra crunch. Ensure the oil is hot to prevent greasiness.
