  • 10 ounces Rotel tomatoes Juicy and zesty tomatoes bring a splash of flavor and moisture.
  • 21 ounces cream of chicken soup Velvety and rich, forming a creamy base.
  • 16 ounces spaghetti Classic pasta that pairs perfectly with the creamy sauce.
Vegetables
  • 1/2 cup bell pepper (diced) Adds crisp texture and vibrant color.
  • 1/2 cup onion (diced) Aromatic and flavorful, enriching the overall taste.
Dairy Ingredients
  • 4 ounces cream cheese (cubed) Enhances the creaminess of the sauce.
  • 3 cups Cheddar (shredded from a block) Adds a delightful cheesy pull.
  • 1 cup Pepper Jack (shredded from a block) Introduces a robust flavor element.
  • 1/4 cup heavy cream Contributes to the rich mouthfeel.

Method

Preparation
  1. Spray the inside of your 6-quart slow cooker with cooking spray to prevent sticking.
  2. Place the boneless chicken breasts at the bottom of the slow cooker.
  3. Add the diced tomatoes, bell peppers, onions, and cream of chicken soup on top of the chicken, arranging everything evenly.
Cooking
  1. Cover the slow cooker and set it on low for 6 to 8 hours, or until the chicken is fully cooked and tender.
  2. Once cooked, remove the chicken and shred it with two forks.
  3. Return the shredded chicken to the slow cooker and mix in the heavy cream, cream cheese, and all but 1 cup of Cheddar cheese.
  4. Boil the spaghetti according to package instructions. Once cooked, drain the pasta and add it to the slow cooker.
  5. Gently stir the spaghetti into the chicken mixture, ensuring it’s well coated.
  6. Sprinkle the reserved Cheddar cheese on top, then cover and cook on low for an additional 30 minutes.

Notes

For added flavor, marinate the chicken in your favorite spices or sauces overnight. Pre-cooked rotisserie chicken can be used as a shortcut. Experiment with different types of cheese for a unique taste.
