Ingredients
Method
Preparation
- Preheat the oven to 450 °F.
- Cut the red pepper in half, remove the seeds, and slice the tomatoes in half. Cut the red onion into four wedges. Remove the stems from the chiles.
Roasting Vegetables
- Place the tomatoes and red bell pepper cut-side down on a parchment-lined baking sheet. Add onion quarters and chiles.
- Drizzle olive oil over the vegetables and coat evenly.
- Roast in the oven for 15 minutes, then check the habaneros. Remove if charred and roast the others for an additional 5-10 minutes, or until wrinkly.
- If needed, broil for a quick 2 minutes, watching closely.
- Once roasted, peel skins from the red pepper and tomatoes.
Blending and Finishing
- Transfer roasted vegetables to a food processor. Add chopped mango and salt, and blend to desired consistency.
- Mix in lime juice and chopped cilantro, pulse gently, and adjust seasoning as necessary.
- Chill in the fridge for at least 30 minutes for the best flavor.
Serving
- Serve with grilled meats, seafood, tortilla chips, or tacos.
Notes
Taste as you go to adjust seasonings to your preference. Use fresh mango for best flavor. Leftovers can be stored in an airtight container in the refrigerator for 3 days or frozen for 3 months.
