Ingredients

Main Ingredients
  • 3 cups cooked shredded chicken Tender and juicy, the star of the dish, full of flavor.
  • 3 cups BBQ sauce Sweet, tangy, and smoky, enhances the chicken.
  • 1 large bag tortilla chips Crisp and crunchy, a sturdy base for toppings.
  • 2 cups shredded Monterey Jack or cheddar cheese Creamy and melty, ties the dish together.
  • 1/3 cup chopped red onion Sharp and aromatic, adds freshness.
  • 1/2 cup mild pickled jalapenos Spicy and tangy, balances richness.
  • 1/2 cup queso blanco Smooth and creamy, perfect drizzle.
  • 1/4 cup chopped cilantro Optional, adds a finishing touch.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, mix the cooked shredded chicken with BBQ sauce until well coated.
Assembling
  1. Layer half of the tortilla chips on the baking sheet, then half of the BBQ chicken mixture and half of the shredded cheese. Repeat with the remaining chips, chicken, and cheese.
  2. Sprinkle pickled jalapenos and red onion on top if desired.
Baking
  1. Bake for 11-13 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and drizzle with queso blanco and extra BBQ sauce. Bake for an additional 3-4 minutes.
Serving
  1. Garnish with cilantro before serving hot, alongside your favorite dips or toppings.

Notes

For better flavor, consider smoking the chicken before shredding. Experiment with different cheese types and add crushed tortilla chips on top after baking for extra crunch.
