Ingredients

Main Ingredients
  • 200-250 g 2-3 large carrots (prepared) These carrots add crunch and sweetness.
  • 1 tsp iodine-free salt (fine-grain) Essential for fermentation brine.
  • 200 ml non-chlorinated water Use clean water for fermentation.
  • 2-3 cloves garlic (peeled and cut into slivers) Adds aromatic flavor.
  • 1 inch fresh ginger (sliced into slivers) Provides warmth and depth.
  • 1-2 pieces jalapeno peppers (sliced lengthwise into quarters) Adds heat to the carrots.
  • 1 tsp dried dill (or 1 tablespoon fresh) Enhances flavor with herby notes.
  • 3 pieces sliced green onion, red onion, and yellow onion Brings sweetness and a bite.

Method

Preparation
  1. Slice your garlic, ginger, and jalapeños. Set them aside.
  2. Scrub the carrots under running water to remove dirt. Slice them lengthwise into sticks.
  3. Use a digital scale to obtain the tare weight of your jar.
Packing
  1. Layer the flavoring items into the bottom of the jar.
  2. Pack the carrot sticks upright into the jar, leaving about an inch of headspace.
  3. Pour non-chlorinated water over the packed carrots until submerged.
Salting and Sealing
  1. Weigh the packed jar and subtract the tare weight to find the weight of the carrots and water.
  2. Calculate the salt needed (2.5% of the weight) and add it to the jar.
  3. Screw the canning jar lid on tightly and shake to dissolve the salt completely.
  4. Add a fermentation weight to keep the carrots submerged, then seal the jar.
Fermentation
  1. Label your jar with the recipe name, date, and salt concentration.
  2. Let the jar rest on your kitchen counter for 7-14 days, tasting periodically.
Storage
  1. Once fermentation is complete, store in the refrigerator in an airtight jar.

Notes

For a deeper flavor, experiment with spices like cumin or coriander. Store in the refrigerator for best freshness.
