Method
Preparation
- Slice your garlic, ginger, and jalapeños. Set them aside.
- Scrub the carrots under running water to remove dirt. Slice them lengthwise into sticks.
- Use a digital scale to obtain the tare weight of your jar.
Packing
- Layer the flavoring items into the bottom of the jar.
- Pack the carrot sticks upright into the jar, leaving about an inch of headspace.
- Pour non-chlorinated water over the packed carrots until submerged.
Salting and Sealing
- Weigh the packed jar and subtract the tare weight to find the weight of the carrots and water.
- Calculate the salt needed (2.5% of the weight) and add it to the jar.
- Screw the canning jar lid on tightly and shake to dissolve the salt completely.
- Add a fermentation weight to keep the carrots submerged, then seal the jar.
Fermentation
- Label your jar with the recipe name, date, and salt concentration.
- Let the jar rest on your kitchen counter for 7-14 days, tasting periodically.
Storage
- Once fermentation is complete, store in the refrigerator in an airtight jar.
Notes
For a deeper flavor, experiment with spices like cumin or coriander. Store in the refrigerator for best freshness.
