Ingredients

Crepe Batter
  • 2 cups whole milk or creamy dairy-free milk Choose a dairy-free option if preferred.
  • 3 medium eggs Use room temperature eggs for best results.
  • 4 tablespoons unsalted butter, softened Coconut oil can be used as a dairy-free option.
  • 1 teaspoon raw honey Adjust according to sweetness preference.
  • ¾ cup cassava flour Provides a gluten-free texture.
  • ½ teaspoon fine sea salt Enhances flavors.
  • Additional tablespoons butter for frying To achieve a crispy texture.

Method

Preparation
  1. Add all ingredients in the listed order into a blender: milk, eggs, butter, honey, flour, and salt. Blend for a few seconds until the mixture is frothy and combined.
  2. Set the crepe batter aside for a few minutes to allow any bubbles to settle.
Cooking
  1. Heat a stainless steel skillet over medium heat and add 1-2 teaspoons of butter. Melt and swirl it around to cover the skillet.
  2. Pour ¼ cup of the batter onto the skillet. Tilt the pan in a circular motion to evenly spread the batter.
  3. Cook on medium-low until bubbles form and edges begin to lift, then carefully flip the crepe once lightly golden.
  4. Cook for an additional 20-30 seconds until tender, then slide onto a plate.
  5. Repeat the process, adding a little butter between each crepe to prevent sticking.

Notes

For richer flavor, add a pinch of vanilla extract. For thinner crepes, add more milk to the batter. Letting the batter sit for 15-30 minutes improves the texture.
