Preparation
  1. In a small bowl or glass jar, combine the first eight marinade ingredients. Whisk until well-blended.
  2. Divide shrimp and sliced vegetables into two bowls and drizzle marinade over both. Toss gently. Let stand for 10 minutes.
Cooking Rice
  1. Rinse the rice in cool water. In a medium saucepan, combine rinsed rice, 1 1/2 cups of water, and a pinch of salt. Bring to a boil.
  2. Once boiling, reduce heat to low, cover, and simmer for 15-18 minutes until tender. Remove from heat and let sit for 10 minutes.
Making Lemon-Garlic Yogurt
  1. In a medium bowl, combine Greek yogurt, grated garlic, lemon juice, and a pinch of salt. Stir until smooth.
Sautéing Vegetables and Cooking Shrimp
  1. Heat a large skillet over medium heat. Add marinated vegetables, sauté until tender and slightly golden, about 8-10 minutes. Transfer back to marinade bowl.
  2. In the same skillet, add marinated shrimp and cook for about 2 minutes per side until opaque and curled.
Assembly
  1. Divide the fluffy rice among four serving bowls. Top each with sautéed vegetables, shrimp, a dollop of Lemon-Garlic Yogurt, and additional parsley.
  2. Drizzle any reserved marinade over the bowls.

Notes

Let shrimp marinate longer for deeper flavor; consider adding a pinch of cayenne to the marinade for a kick. Use frozen shrimp if necessary.
