  • 2 pieces Lemons (juice) Provides a tangy kick.
  • 1/2 cup 7-Up (soda) Tenderizes the chicken.
  • 1 tsp Ground black pepper Brings a hint of heat.
  • 5 tbsp Dark brown sugar Caramelizes while grilling.
  • 1 cup Ketchup Binds the marinade.
Chicken
  • 2 lbs Chicken thighs (deboned and skin removed) Provide richness and flavor.

Method

Preparation of Marinade
  1. In a large bowl, combine the soy sauce, smashed garlic, chopped onion, juice from the two lemons, 7-Up, ground black pepper, dark brown sugar, and ketchup. Whisk until well combined.
Prepare Chicken
  1. Debone the chicken thighs and remove the skin. Cut the thighs into 2-inch squares for even cooking.
Marination
  1. Place the cubed chicken pieces in a container or ziplock bag. Pour the marinade over the chicken, ensuring it’s well coated. Refrigerate for a minimum of 4 hours, ideally up to 24 hours.
Prepare Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Thread Chicken
  1. After marination, thread the chicken onto the soaked skewers, packing them tightly.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Grill the kebabs, turning until the internal temperature reaches 165°F. Adjust heat as needed.
Rest and Serve
  1. Once cooked, remove the skewers from the grill. Let them rest for about 5 minutes before serving.

Notes

For added flavor, consider adding bell peppers or cherry tomatoes to the skewers. Keep a close eye while grilling to prevent burning.
