Method

Prepare the Meatballs
  1. Preheat your oven to 400℉ (200℃) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the ground chicken, harissa, garlic, onion, parsley, dill, mint, salt, and pepper. Mix until just combined without overmixing.
  3. Wet your hands to make rolling easier, and form the mixture into 12-14 small meatballs.
Cook the Meatballs
  1. Heat a large nonstick skillet or cast iron pan over medium to medium-high heat and add the olive oil.
  2. Once hot, gently add the meatballs, cooking them for about 3-4 minutes per side until deeply golden brown.
  3. Transfer the browned meatballs to your prepared baking sheet and bake in the oven for about 12-15 minutes until cooked through (internal temperature of 165℉ or 75℃).
Make the Cucumber Herb Salad
  1. In a small bowl, combine diced cucumber, lemon juice, red onion, dill, and mint. Stir well and season to taste with salt and pepper.
Assemble Your Bowls
  1. Spread a generous dollop of hummus at the bottom of your chosen bowl.
  2. Layer in the couscous (or your preferred base) and top with scoops of cucumber herb salad.
  3. Add the cooked meatballs, sprinkle with crumbled feta and fresh herbs, drizzle with extra harissa paste if desired, and finish with olive oil and a squeeze of lemon.

Notes

Adjust the harissa paste to suit your preferred spice level. Searing the meatballs before baking adds a flavorful crust. These meatballs can be made ahead of time and refrigerated. Variations include using ground turkey or quinoa for gluten-free.
