Method
Prepare the Meatballs
- Preheat your oven to 400℉ (200℃) and line a baking sheet with parchment paper.
- In a medium bowl, combine the ground chicken, harissa, garlic, onion, parsley, dill, mint, salt, and pepper. Mix until just combined without overmixing.
- Wet your hands to make rolling easier, and form the mixture into 12-14 small meatballs.
Cook the Meatballs
- Heat a large nonstick skillet or cast iron pan over medium to medium-high heat and add the olive oil.
- Once hot, gently add the meatballs, cooking them for about 3-4 minutes per side until deeply golden brown.
- Transfer the browned meatballs to your prepared baking sheet and bake in the oven for about 12-15 minutes until cooked through (internal temperature of 165℉ or 75℃).
Make the Cucumber Herb Salad
- In a small bowl, combine diced cucumber, lemon juice, red onion, dill, and mint. Stir well and season to taste with salt and pepper.
Assemble Your Bowls
- Spread a generous dollop of hummus at the bottom of your chosen bowl.
- Layer in the couscous (or your preferred base) and top with scoops of cucumber herb salad.
- Add the cooked meatballs, sprinkle with crumbled feta and fresh herbs, drizzle with extra harissa paste if desired, and finish with olive oil and a squeeze of lemon.
Notes
Adjust the harissa paste to suit your preferred spice level. Searing the meatballs before baking adds a flavorful crust. These meatballs can be made ahead of time and refrigerated. Variations include using ground turkey or quinoa for gluten-free.
