Ingredients

Dough Ingredients
  • 145 g strong white bread flour (ideally 13-14% protein)
  • 145 g room temperature water
  • 0.15 g instant dry yeast
  • 435 g strong white bread flour
  • 260 g fridge cold water
  • 14 g salt
Dusting Ingredients
  • Semolina for dusting

Method

Mixing and Proofing
  1. Mix the flour and yeast in a large bowl.
  2. Gently pour in the cold water and stir until no dry flour remains.
  3. Cover the bowl and let it sit at room temperature for approximately 12 hours until it doubles in size and becomes bubbly.
Dough Preparation
  1. Transfer the poolish mixture into a mixer bowl, adding the remaining water, flour, and salt.
  2. Mix on low speed for about 5 minutes, then increase to medium speed for an additional 10 minutes until smooth.
  3. If dough tears during the windowpane test, let it rest for 5 minutes and mix for another 5 minutes.
Coil Folds and Cold Proofing
  1. Transfer the dough to a proofing container, dampening hands to prevent sticking.
  2. Incorporate coil folds by lifting the dough and folding each end under, then cover for a 60-minute break.
  3. Refrigerate for a cold proof of 72-96 hours.
Shaping and Final Proofing
  1. After cold proofing, leave the container covered at room temperature for an hour.
  2. Tip the dough onto a floured surface, weigh, and portion into 8 balls, each about 245g.
  3. Shape each ball by folding corners inward and sealing by dragging across a non-floured surface.
  4. Place in a proofing container, spaced apart, for about 4 hours at room temperature.
  5. Perform a poke test to check readiness.
Baking
  1. Preheat the oven with a pizza stone or steel for a full hour at the highest temperature (270-300°C).
  2. Dust the dough ball with semolina, then press from the center outward to form the pizza base.
  3. Top with sauce, cheese, and desired toppings, then transfer to the oven for 3-4 minutes.

Notes

Experiment with different toppings and make the dough a day in advance for flavor development.
