Preparation
- In a small bowl, mix together the oil, sesame oil, minced garlic, minced ginger, dark soy sauce, and honey to make the marinade.
- Place the chicken pieces in a bowl and pour on three-quarters of the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, ideally up to a day.
- If using wooden skewers, soak them in water for about 30 minutes before cooking.
- Preheat your BBQ or griddle until very hot.
Cooking
- Thread a piece of marinated chicken onto a skewer, followed by a chunk of red bell pepper and then another piece of chicken, finishing with a slice of onion. Repeat until skewers are filled.
- Cook the skewers on the preheated BBQ or griddle for 8-10 minutes, turning them 3-4 times. Brush with the reserved marinade halfway through.
- Check for doneness by slicing open the largest piece of chicken; it should be white and no longer pink in the center.
- Once cooked, sprinkle skewers with sesame seeds and fresh coriander/cilantro.
Notes
For extra flavor, add a splash of lime juice to the marinade. Leftover marinade can be boiled and used as a sauce. Customize vegetables based on availability.
