Ingredients

For the marinade
  • 1 tbsp oil Avocado oil recommended for light flavor.
  • 1 tbsp sesame oil Adds a nutty aroma.
  • 2 cloves garlic Peeled and minced for zest.
  • 1 tsp minced ginger Fresh and fragrant.
  • 3 tbsp dark soy sauce To deepen the flavor.
  • 3 tbsp honey For a sweet, sticky glaze.
For the skewers
  • 2 breasts chicken Approximately 350g/12.5 oz, chopped into bite-sized pieces.
  • 1 red bell pepper chopped into large chunks For color and taste.
  • 1 onion peeled and sliced into squares For sweetness.
  • 1 tbsp sesame seeds For garnish and crunch.
  • 1 small bunch coriander/cilantro Roughly torn for freshness.

Method

Preparation
  1. In a small bowl, mix together the oil, sesame oil, minced garlic, minced ginger, dark soy sauce, and honey to make the marinade.
  2. Place the chicken pieces in a bowl and pour on three-quarters of the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, ideally up to a day.
  3. If using wooden skewers, soak them in water for about 30 minutes before cooking.
  4. Preheat your BBQ or griddle until very hot.
Cooking
  1. Thread a piece of marinated chicken onto a skewer, followed by a chunk of red bell pepper and then another piece of chicken, finishing with a slice of onion. Repeat until skewers are filled.
  2. Cook the skewers on the preheated BBQ or griddle for 8-10 minutes, turning them 3-4 times. Brush with the reserved marinade halfway through.
  3. Check for doneness by slicing open the largest piece of chicken; it should be white and no longer pink in the center.
  4. Once cooked, sprinkle skewers with sesame seeds and fresh coriander/cilantro.

Notes

For extra flavor, add a splash of lime juice to the marinade. Leftover marinade can be boiled and used as a sauce. Customize vegetables based on availability.
