Preparation
- In a bowl, combine the egg white, all-purpose flour, cornstarch, baking powder, and ice-cold water. Whisk thoroughly until smooth and set aside.
- Cut the chicken into cubes or strips and drop them into the batter, ensuring even coating.
- In another bowl, mix together honey, apple cider vinegar, ketchup, sesame oil, cornstarch, water, and salt to create the sauce.
Cooking
- Heat about 2 inches of oil in a sauté pan on medium to high until it reaches approximately 350°F (175°C).
- Fry the coated chicken cubes in small batches for about 3-4 minutes until golden brown and crispy.
- Drain excess oil on paper towels.
- In a wok or skillet, sauté minced garlic in two tablespoons of frying oil until fragrant; add the honey sesame sauce and simmer until thickened.
- Toss the fried chicken in the simmering sauce to ensure even coating.
- Garnish with toasted sesame seeds and serve hot.
Notes
For the juiciest chicken, use fresh meat. Ensure the oil is hot enough for frying. If preferring a spicier sauce, add red pepper flakes. Serve with steamed rice or stir-fried vegetables for a complete meal.
