Method
Preparation
- Preheat your oven to 425°F (220°C).
- In two separate large bowls, add the beaten eggs to one and flour to the other.
- Drench the diced chicken pieces in the egg, ensuring they are fully coated, and then roll them in the flour, gently shaking off any excess.
- Grease a non-stick baking sheet with approximately 1/2 tablespoon of olive oil or cooking spray.
- Arrange the chicken pieces on the sheet, leaving space for the broccoli.
- Chop the broccoli into bite-sized florets.
Cooking
- Bake the chicken in the preheated oven for about 10 minutes.
- Meanwhile, prepare the jasmine rice according to package instructions.
- After 10 minutes, take the chicken out, flip each piece, and scatter the broccoli around the chicken on the baking sheet.
- Drizzle the broccoli with the remaining olive oil and season with salt and pepper.
- Return the tray to the oven for another 10 minutes.
Sauce Preparation
- In a microwave-safe bowl, combine ketchup, honey, and Sriracha.
- Microwave the mixture for about 2 minutes, stirring occasionally, until the sauce thickens slightly.
Assembly
- Once the chicken is cooked, remove it from the oven and toss all the pieces in the sauce to coat evenly.
- Divide the cooked jasmine rice among your bowls, add the chicken and broccoli on top.
- Finish with garnishes of sliced green onions and sesame seeds, if desired. Serve and enjoy!
Notes
For crunchier chicken, consider double-dipping: dip the chicken in egg and flour twice. Adjust spiciness by varying Sriracha amount. Marinating chicken in sauce for 30 minutes before baking adds flavor.
