  • 2 pieces eggs, beaten For coating the chicken
  • 1 tbsp olive oil, divided For greasing and seasoning
Sauce
  • 1/2 cup ketchup
  • 1/2 cup honey
  • 1/3 cup Sriracha Adjust for spiciness
  • 1/2 tsp salt
Garnishes (optional)
  • 2 pieces green onions, sliced For topping
  • 1 tbsp sesame seeds For garnish

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In two separate large bowls, add the beaten eggs to one and flour to the other.
  3. Drench the diced chicken pieces in the egg, ensuring they are fully coated, and then roll them in the flour, gently shaking off any excess.
  4. Grease a non-stick baking sheet with approximately 1/2 tablespoon of olive oil or cooking spray.
  5. Arrange the chicken pieces on the sheet, leaving space for the broccoli.
  6. Chop the broccoli into bite-sized florets.
Cooking
  1. Bake the chicken in the preheated oven for about 10 minutes.
  2. Meanwhile, prepare the jasmine rice according to package instructions.
  3. After 10 minutes, take the chicken out, flip each piece, and scatter the broccoli around the chicken on the baking sheet.
  4. Drizzle the broccoli with the remaining olive oil and season with salt and pepper.
  5. Return the tray to the oven for another 10 minutes.
Sauce Preparation
  1. In a microwave-safe bowl, combine ketchup, honey, and Sriracha.
  2. Microwave the mixture for about 2 minutes, stirring occasionally, until the sauce thickens slightly.
Assembly
  1. Once the chicken is cooked, remove it from the oven and toss all the pieces in the sauce to coat evenly.
  2. Divide the cooked jasmine rice among your bowls, add the chicken and broccoli on top.
  3. Finish with garnishes of sliced green onions and sesame seeds, if desired. Serve and enjoy!

Notes

For crunchier chicken, consider double-dipping: dip the chicken in egg and flour twice. Adjust spiciness by varying Sriracha amount. Marinating chicken in sauce for 30 minutes before baking adds flavor.
