Method

Preparation
  1. In a medium bowl, mix together the flour, salt, and yeast until combined.
  2. Gradually add in the warm water, mixing with a wooden spoon or your hands until the mixture is sticky but not lumpy.
  3. Cover the bowl with plastic wrap and a towel, placing it in a warm area to rise for 24 hours.
Baking
  1. Once the dough has risen, transfer it to a floured surface and gently shape it into a ball.
  2. Preheat your oven to 500°F (260°C).
  3. Lightly oil a 10×15 sheet pan.
  4. With oiled hands, stretch the dough across the pan, ensuring it extends just past the edges, creating an even layer.
  5. Spread the pizza sauce evenly over the dough base.
  6. Sprinkle the grated mozzarella cheese, followed by the slices of finocchiona salami, and finish with the Parmesan cheese.
  7. In a separate small bowl, combine the ricotta and heavy cream, mixing well before setting aside.
  8. Place your pizza in the preheated oven and bake for 10 minutes.
  9. Rotate the pizza and continue baking for an additional 3-5 minutes or until the crust has turned golden brown and the cheese is beautifully melted.
  10. Once out of the oven, drizzle the ricotta mixture and Mike's Hot Honey generously over the top.
  11. Slice and serve immediately for the best experience.

Notes

Dough Consistency: If the dough is too sticky, lightly flour your hands during the shaping process. Let It Rise: Longer rise time allows for a fluffier crust. Experiment with Toppings: Feel free to add your favorite vegetables or cured meats.
