  • 2/3 cup sugar Unbleached Zulka sugar recommended.
  • 3 tablespoons water Helps in cooking down the huckleberries.
  • 1 tablespoon fresh lemon juice Optional if your berries are already sweet.

Method

Preparation
  1. Pick through the fresh huckleberries, removing any wrinkled or bad berries, along with stems and leaves.
  2. Rinse the berries under cool running water to clean them thoroughly.
Cooking
  1. In a 2-quart saucepan, add huckleberries, sugar, water, and lemon juice.
  2. Place the saucepan over medium heat and stir gently until the mixture bubbles.
  3. Reduce heat to medium-low and let it simmer for about 12-15 minutes, stirring regularly, until berries soften and juices thicken.

Notes

Using fresh, ripe huckleberries will enhance the flavor. Adjust sweetness according to preference. Consider adding orange zest for a citrusy flavor.
