Ingredients

Filling Ingredients

  • 1/3 cup BBQ sauce Recommended: Sweet Baby Ray's.
  • 1 Tbsp. diced red onion Adds crunch and flavor.
  • 1/4 tsp. red pepper flakes Adjust based on desired heat level.
  • 1/4 cup chopped fresh cilantro For a refreshing flavor.
  • 1 1/2 cups grated sharp cheddar cheese For gooey texture.
  • 6 pieces flour tortillas (8-inch size) Soft tortillas for wrapping.

Method

Preparation
  1. In a medium bowl, combine the chicken, BBQ sauce, diced red onion, red pepper flakes, and chopped cilantro. Stir until everything is well-coated.
  2. Spray one side of a tortilla with cooking spray and place the sprayed side down in a nonstick skillet over medium-low heat.
Assembly
  1. Spread about a cup of the chicken mixture over the tortilla.
  2. Sprinkle a generous amount of grated cheese over the top.
  3. Top with another tortilla. Cover the pan with a lid to help the cheese melt.
Cooking
  1. Cook until the bottom tortilla is golden brown, about 3-4 minutes.
  2. Gently flip the quesadilla and cook until the other side is golden and the cheese is melted.
Serving
  1. Remove from the pan and cool for a moment before slicing into wedges.
  2. Repeat the process with the remaining tortillas and filling.

Notes

Keep cooked quesadillas warm in a preheated oven. Customize with additional fillings like black beans or corn. For extra spice, add jalapeños or use a hotter BBQ sauce.
