Preparation
- In a medium bowl, combine the chicken, BBQ sauce, diced red onion, red pepper flakes, and chopped cilantro. Stir until everything is well-coated.
- Spray one side of a tortilla with cooking spray and place the sprayed side down in a nonstick skillet over medium-low heat.
Assembly
- Spread about a cup of the chicken mixture over the tortilla.
- Sprinkle a generous amount of grated cheese over the top.
- Top with another tortilla. Cover the pan with a lid to help the cheese melt.
Cooking
- Cook until the bottom tortilla is golden brown, about 3-4 minutes.
- Gently flip the quesadilla and cook until the other side is golden and the cheese is melted.
Serving
- Remove from the pan and cool for a moment before slicing into wedges.
- Repeat the process with the remaining tortillas and filling.
Notes
Keep cooked quesadillas warm in a preheated oven. Customize with additional fillings like black beans or corn. For extra spice, add jalapeños or use a hotter BBQ sauce.
