Method

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Wash and dice the medium red potatoes into small cubes. Spread them on a greased baking sheet in a single layer and sprinkle with salt and pepper. Roast in the oven for 20-25 minutes until golden and tender.
  3. While the potatoes roast, heat a large skillet over medium heat, add the breakfast sausage and diced green bell pepper, cooking until the sausage is fully browned and the pepper is tender. Drain excess grease and set aside.
  4. In a medium bowl, crack the eggs, add a splash of milk, and season with salt and pepper. Beat the eggs until fluffy. Scramble the eggs over medium-low heat in the same skillet used for the sausage until fully cooked. Combine with the sausage and bell pepper mixture.
  5. Once roasted, evenly divide the crispy potatoes among 6 meal prep containers. Layer the sausage and egg mixture on top, then sprinkle each bowl with 2 tablespoons of shredded cheddar cheese.
  6. Allow the bowls to cool completely before sealing them. Store in the refrigerator until ready to enjoy.

Notes

Consider adding other veggies for more nutrition and flavor. You can also experiment with spices like paprika or garlic powder for a unique twist. For longer storage, freezer-friendly; just make sure to reheat thoroughly.
