Ingredients

For the Mango Layer
  • 2 cups mango puree Use ripe, sweet mangoes for the best flavor.
  • 1 teaspoon gelatin Bloom this in warm water.
For the Milk Layer
  • 1 cup whole milk Adds body and depth to the panna cotta.
  • 1 cup heavy cream Provides richness and smoothness.
  • 1/2 cup granulated sugar Balances the tang of the mango.
  • 1.5 teaspoons gelatin Bloom in warm water as well.

Method

Preparation
  1. In a small bowl, add 2 tablespoons of warm water. Sprinkle 1 teaspoon of gelatin over the water and let it sit for about 10 minutes to bloom.
  2. In a small saucepan set over low heat, warm the mango puree along with the bloomed gelatin. Stir gently until the gelatin is fully dissolved and incorporated into the puree.
  3. Tilt your serving glasses or ramekins to about a 45-degree angle. Carefully pour in the mango mixture, ensuring an elegant presentation. Place it in the refrigerator, allowing it to set for about 4 hours.
  4. In another small bowl, add 2 tablespoons of warm water and sprinkle the remaining 1.5 teaspoons of gelatin over it. Let this sit for 10 minutes as well.
  5. In a saucepan over low heat, combine the milk, sugar, and heavy cream. Bring it to a gentle simmer, stirring occasionally until all the sugar has dissolved. Avoid boiling the mixture to preserve the creaminess.
  6. Once the milk mixture has heated, add the prepared gelatin while it’s still warm. Mix thoroughly until the gelatin is fully dissolved. Allow the mixture to cool down for 10-15 minutes.
  7. Ensure that the mango layer in your glasses has set. Gently pour the cooled milk mixture over the mango layer, adding another beautiful layer to your panna cotta.
  8. Place the glasses back in the refrigerator and allow the dessert to set completely for at least 4 hours.
  9. For a beautiful presentation, serve your Mango Panna Cotta with additional fresh mango pieces on top.
