Ingredients

Main Ingredients
  • 2 pieces ripe mangos (peeled and diced) These sunny, golden fruits provide creamy, succulent sweetness.
  • 1 piece onion or shallot (finely chopped; preferably red onion) Adds a crunchy bite that complements the mango.
  • 1 piece jalapeno pepper (finely chopped; habanero for more heat) Introduces a spicy kick.
  • 0.5 piece bell pepper (chopped) Contributes a refreshing, crisp texture.
  • 0.25 cup fresh cilantro (chopped) Brings bright, aromatic freshness.
  • 1 clove garlic (minced) Adds depth and savory notes.
  • 2 tablespoons extra virgin olive oil (or avocado oil) Provides richness and helps meld the flavors.
  • 1 piece lime (juiced; about 2 ½ teaspoons of juice) Adds tangy acidity.
  • 0.5 teaspoon sea salt or pink salt Enhances the natural flavors.
  • 0.125 teaspoon freshly ground black pepper Adds warmth.

Method

Preparation
  1. Combine the diced mango, chopped onion, finely chopped jalapeno (or habanero), chopped bell pepper, chopped cilantro, and minced garlic in a mixing bowl.
  2. With clean hands or a spatula, gently mix the ingredients together without mashing the mango too much.
  3. Add the extra virgin olive oil and the fresh lime juice to enhance the flavors.
  4. Season with sea salt and black pepper to taste.
  5. Serve immediately or let sit in the refrigerator for a more blended flavor. The salsa remains fresh for up to 5 days.

Notes

For best flavor, use ripe mangoes that yield slightly to pressure. You can make this salsa ahead of time but hold off on adding the lime juice until just before serving for maximum freshness. This salsa pairs wonderfully with grilled chicken or fish, tacos, or chips.
