  • 1/4 tsp black pepper For warm, aromatic heat.
  • 16 flat metal skewers flat metal skewers Sturdy enough for grilling (25-30cm in length).

Method

Preparation
  1. Cut the beef into 3.25 cm wide cubes for uniform cooking.
  2. In a mixing bowl, combine the minced garlic, onion powder, soy sauce, Worcestershire sauce, balsamic vinegar, vegetable oil, and black pepper. Mix well.
  3. Add the beef cubes to the marinade and coat thoroughly. Cover and marinate for 20 minutes to 24 hours in the refrigerator.
  4. While the beef marinates, cut the capsicum and onion into 3.25 cm wide squares.
  5. Thread the marinated beef onto the skewers, alternating with capsicum, onion, and mushrooms.
  6. Using reserved marinade, lightly brush the skewers. Drizzle with olive oil.
Cooking
  1. Heat your barbecue or a large skillet over high heat. Add 1 tablespoon of oil and cook kabobs in batches for 2 minutes on each side until slightly charred.
  2. Total cooking time should be about 8 minutes, basting with reserved marinade.
Serving
  1. Transfer cooked kabobs to a plate and cover loosely with foil for 3 minutes.
  2. Garnish with finely chopped parsley before serving.

Notes

For best results, marinate overnight. Soak wooden skewers for 30 minutes to prevent burning. Feel free to experiment with seasonal vegetables.
