Preparation
- Cut the beef into 3.25 cm wide cubes for uniform cooking.
- In a mixing bowl, combine the minced garlic, onion powder, soy sauce, Worcestershire sauce, balsamic vinegar, vegetable oil, and black pepper. Mix well.
- Add the beef cubes to the marinade and coat thoroughly. Cover and marinate for 20 minutes to 24 hours in the refrigerator.
- While the beef marinates, cut the capsicum and onion into 3.25 cm wide squares.
- Thread the marinated beef onto the skewers, alternating with capsicum, onion, and mushrooms.
- Using reserved marinade, lightly brush the skewers. Drizzle with olive oil.
Cooking
- Heat your barbecue or a large skillet over high heat. Add 1 tablespoon of oil and cook kabobs in batches for 2 minutes on each side until slightly charred.
- Total cooking time should be about 8 minutes, basting with reserved marinade.
Serving
- Transfer cooked kabobs to a plate and cover loosely with foil for 3 minutes.
- Garnish with finely chopped parsley before serving.
Notes
For best results, marinate overnight. Soak wooden skewers for 30 minutes to prevent burning. Feel free to experiment with seasonal vegetables.
