Preparation
- In a bowl, combine the graham cracker crumbs, ground cinnamon, and melted butter. Mix until the crumbs are well moistened. Set aside 2 tablespoons of crumbs for later use. Press the remaining mixture into the bottom of a 9×9-inch pan that has been sprayed with non-stick cooking spray.
- With an electric mixer, beat together the softened cream cheese and confectioners’ sugar until smooth and creamy.
- In another bowl, whip the heavy cream with granulated sugar and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
Layering
- Spread less than half of the cream cheese mixture over the crust. Spoon dollops of blueberry pie filling on top and gently spread to create an even layer.
- Top with the remaining cream cheese mixture, smoothing it out to cover the blueberries. Sprinkle the reserved graham cracker crumbs on top.
Chill
- Cover and refrigerate the dessert for several hours or overnight before serving.
Notes
Options include using 1/3-less fat cream cheese for a lighter version or replacing whipped cream with an 8-ounce container of Cool Whip.
