  • 1/2 tsp cumin Adds depth to the flavor profile.
  • 1/2 tsp paprika Adds depth to the flavor profile.
  • 1 tsp ginger powder Adds warm spiciness.
  • 1/2 - 1 tsp cayenne pepper (optional) For those who like a hint of heat.
  • 1/2 tsp salt Essential for enhancing the flavors.
Chicken and Skewers
  • 1.5 lb chicken thigh fillets (cut into 1"/2.5cm pieces) Juicy and flavorful, perfect for skewering.
  • 1 tbsp olive or vegetable oil Helps to cook the skewers evenly.
  • 8 pieces skewers (soaked in water for 30 minutes if cooking on outdoor BBQ) Essential for holding the chicken pieces.

Method

Preparation
  1. In a mixing bowl, combine the coconut milk, pineapple juice, brown sugar, tomato sauce, soy sauce, lime zest and juice, minced garlic, onion powder, cumin, paprika, ginger powder, cayenne pepper (if using), and salt. Stir thoroughly until well blended.
  2. Remove 1/2 cup of the marinade and set it aside in the fridge for basting later. Add the chicken pieces to the remaining marinade and coat well. Cover and marinate in the fridge for at least three hours, preferably overnight.
  3. After marinating, drain the chicken pieces and discard the leftover marinade. Thread the chicken onto skewers, ensuring they’re packed tightly for even cooking.
Cooking
  1. Heat oil in a large skillet over medium-high heat or prepare your outdoor BBQ.
  2. Once heated, cook the skewers, turning them occasionally. Baste generously with the reserved marinade during cooking until golden brown and fully cooked.
Serving
  1. Serve the skewers hot alongside creamy Coconut Lime Rice.

Notes

Consider adding chunks of bell peppers, red onion, or cherry tomatoes to the skewers for extra flavor. Soak bamboo skewers before grilling to prevent burning. Let skewers sit at room temperature for a better caramelization.
