Ingredients

Main Ingredients
  • 8 oz block of feta cheese, drained from brine around 220 grams
  • 1/4 cup plain Greek yogurt for a creamy texture
  • 1 cup canned pumpkin puree (unsweetened) providing natural sweetness
  • 1-2 Tbsp honey for sweetness; add extra for serving
  • 1 tsp dried thyme or 2 tsp fresh thyme for flavor
  • to taste black pepper (freshly cracked) for a hint of spice
Garnishes and Serving
  • as needed fresh thyme for garnish
  • as desired chopped walnuts optional; raw or toasted for crunch
  • to taste extra honey for finishing touch
  • as needed crusty, toasted bread like sourdough or baguette for serving
  • as needed crackers to complement the dip

Method

Preparation
  1. Add the feta cheese and Greek yogurt to a food processor and blend until smooth.
  2. Scrape down the sides with a spatula as needed to ensure thorough mixing.
Mixing
  1. Add the pumpkin puree, honey (1 or 2 tablespoons), dried thyme, and black pepper into the food processor.
  2. Blend again until all ingredients are completely combined.
Chilling
  1. Transfer the whipped feta to the fridge and cover it. Let it chill for 30 to 60 minutes.
  2. This step allows the dip to harden and the flavors to meld beautifully.
Serving
  1. Transfer the chilled dip to a large serving bowl and garnish with chopped walnuts (if using), fresh thyme, extra honey, and more black pepper.
  2. Serve alongside crusty, toasted bread or crackers.

Notes

For a creamier texture, add more Greek yogurt or a splash of olive oil while blending. Experiment with herbs like rosemary or sage for variations. Adjust honey based on desired sweetness. Toasting walnuts enhances their flavor.
