Method
Marinate the Chicken
- Combine the chicken breasts, minced garlic, olive oil, adobo sauce, chili powder, cumin, oregano (or Italian seasoning), salt, and black pepper in a large bowl or a ziplock bag. Ensure the chicken is thoroughly coated with the marinade.
- Cover the bowl with plastic wrap or seal the bag and refrigerate for at least 30 minutes, up to 2 days for richer flavor.
Heat the Pan
- Preheat about 1 tablespoon of oil in a large pan over medium-high heat until it is nice and hot.
Cook the Chicken
- Add the marinated chicken to the pan, avoiding overcrowding. Cook for about 6-7 minutes on each side, turning occasionally, until fully cooked through and browned. Check that the internal temperature reaches 165°F.
Rest and Serve
- Remove the chicken and place it on a large cutting board. Allow it to rest for 5-10 minutes to redistribute the juices.
- Slice or chop the chicken into strips or cubes and serve in a burrito, on a salad, or on its own.
Notes
For added tenderness, pound the chicken breasts to an even thickness before marinating. You can also add a teaspoon of honey for sweetness or adjust spice levels for personal preference. The marinated chicken can be prepared a day in advance for quicker cooking.
