Ingredients

Main Ingredients
  • 2 lbs boneless skinless chicken breasts (pounded thin) These juicy chicken breasts serve as a blank canvas, soaking up all the rich flavors from the marinade.
  • 2 cloves garlic (minced) Adds a robust, aromatic depth to the dish.
  • 2 tablespoons olive oil Brings a luscious, silky texture while aiding in cooking.
  • 2 tablespoons adobo sauce from a small can of Chipotle peppers Infuses the chicken with a spicy, smoky kick.
  • 1 tablespoon chili powder Gives warmth and a hint of heat.
  • 1 teaspoon cumin Provides an exotic flair.
  • 1/2 teaspoon oregano or Italian seasoning Elevates the taste with fresh herbal notes.
  • 1 teaspoon salt Essential for enhancing all other flavors.
  • 1/2 teaspoon black pepper Adds a classic touch of flavor.

Method

Marinate the Chicken
  1. Combine the chicken breasts, minced garlic, olive oil, adobo sauce, chili powder, cumin, oregano (or Italian seasoning), salt, and black pepper in a large bowl or a ziplock bag. Ensure the chicken is thoroughly coated with the marinade.
  2. Cover the bowl with plastic wrap or seal the bag and refrigerate for at least 30 minutes, up to 2 days for richer flavor.
Heat the Pan
  1. Preheat about 1 tablespoon of oil in a large pan over medium-high heat until it is nice and hot.
Cook the Chicken
  1. Add the marinated chicken to the pan, avoiding overcrowding. Cook for about 6-7 minutes on each side, turning occasionally, until fully cooked through and browned. Check that the internal temperature reaches 165°F.
Rest and Serve
  1. Remove the chicken and place it on a large cutting board. Allow it to rest for 5-10 minutes to redistribute the juices.
  2. Slice or chop the chicken into strips or cubes and serve in a burrito, on a salad, or on its own.

Notes

For added tenderness, pound the chicken breasts to an even thickness before marinating. You can also add a teaspoon of honey for sweetness or adjust spice levels for personal preference. The marinated chicken can be prepared a day in advance for quicker cooking.
