Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the cubed butternut squash, sliced carrots, and chopped onion with 1 ½ tablespoons of olive oil, salt, and pepper.
  3. Spread the seasoned vegetables out on a large baking sheet in a single layer and roast for about 45 minutes, or until browned and fork-tender.
  4. While the vegetables are roasting, heat a large pot over medium-high heat and add the remaining olive oil, minced garlic, and ginger. Sauté for about 1 minute until fragrant.
  5. Once the vegetables are roasted, add them to the pot along with the vegetable broth, cumin, and apple. Stir well and bring to a boil.
  6. Reduce the heat to a simmer, cover the pot, and let cook for about 10 minutes.
  7. Remove the pot from heat and blend the soup until completely smooth and creamy.
  8. Drizzle with coconut milk and sprinkle with roasted pepitas before serving.

Notes

For a thinner soup, add more vegetable broth. Consider spices like nutmeg or cinnamon for added flavor.
