Ingredients

Dough and Sauce
  • 1 tbsp extra virgin olive oil
  • 1/3 cup pizza sauce
  • 1/2 recipe artisan pizza dough (one 15 oz dough ball)
Sausage and Cheese
  • 4 oz sweet Italian sausage about 1 link
  • 3 oz shredded fontina cheese
  • 2 oz shredded pecorino romano cheese
Vegetables and Eggs
  • 1 tbsp unsalted butter
  • 1/2 onion finely diced
  • 3 eggs

Method

Preparation
  1. Preheat the oven to 500°F and place a pizza steel or stone inside to heat for 45 minutes.
  2. Generously flour a pizza peel and set it aside.
Cooking Sausage
  1. In a large skillet over medium-high heat, heat the olive oil.
  2. Add the sweet Italian sausage, breaking it up as it cooks, and sauté until cooked through and crispy, about 10 to 12 minutes.
  3. Transfer the cooked sausage to a paper towel-lined plate to drain excess oil.
Caramelizing Onion
  1. In the same pan, reduce heat to medium and melt the butter.
  2. Add the diced onion, season with salt and pepper, and cook until softened, about 10 minutes.
  3. Reduce heat to medium-low and cook until golden brown and soft, about another 10 minutes, then transfer to a bowl to cool slightly.
Assembling the Pizza
  1. Flatten the pizza dough on a floured surface into a large disk with a thick 1-inch lip around the edges.
  2. Place the disk onto the prepared pizza peel, adjusting the shape as needed.
  3. Spread the pizza sauce over the dough, leaving a half-inch border for the crust.
  4. Sprinkle cheeses, sausage, and caramelized onions evenly over the sauce.
Adding Eggs and Baking
  1. Gently slide the pizza onto the preheated steel or stone.
  2. Create small wells and crack an egg into each well.
  3. Bake for about 8 to 10 minutes, or until cheese is melted and egg whites are cooked through.
Serving
  1. Allow the pizza to cool slightly before slicing it into generous pieces.
  2. Serve warm and enjoy!

Notes

Dough can be store-bought for a quicker option. For creamier texture, use medium eggs. Substitute sausage if desired. Add vegetables for a nutritional boost.
