Ingredients
Method
Cook the Fettuccine
- Cook the fettuccine according to the package instructions, undercooking it by 2 minutes for a firm texture.
- Optionally transfer to a bowl of ice water for 2 minutes to stop the cooking process. Drain and set aside.
Prepare the Shrimp
- Heat a skillet over medium heat and melt 1 tablespoon of butter.
- Add the shrimp, sprinkle with salt and pepper, and cook for 2 to 3 minutes on each side until pink.
- Remove the shrimp from the skillet and set aside.
Make the Sauce
- Add remaining butter to the same skillet along with minced garlic and sauté until golden brown.
- Gradually add flour, stirring until combined. Slowly pour in heavy cream and whole milk, stirring constantly.
- Whisk in the egg yolk to enrich the flavor and texture before it thickens.
Add Cheese
- Incorporate grated Parmesan cheese, whisking until melted.
- Adjust thickness with reserved pasta water if necessary.
- Taste and adjust salt if needed.
Combine Everything
- Reduce heat and add cooked shrimp and fettuccine to the skillet, tossing gently to coat.
- Serve immediately, garnished with parsley and more Parmesan if desired.
Notes
For an extra touch, consider adding red pepper flakes. Use large, fresh shrimp for best results. A squeeze of fresh lemon juice before serving brightens the dish.
