  • 1 egg yolk Adds silkiness to the sauce.
  • 1 cup grated parmesan cheese Essential for a cheesy flavor.
  • 1 tablespoon fresh parsley (chopped) Brightens the dish visually.

Method

Cook the Fettuccine
  1. Cook the fettuccine according to the package instructions, undercooking it by 2 minutes for a firm texture.
  2. Optionally transfer to a bowl of ice water for 2 minutes to stop the cooking process. Drain and set aside.
Prepare the Shrimp
  1. Heat a skillet over medium heat and melt 1 tablespoon of butter.
  2. Add the shrimp, sprinkle with salt and pepper, and cook for 2 to 3 minutes on each side until pink.
  3. Remove the shrimp from the skillet and set aside.
Make the Sauce
  1. Add remaining butter to the same skillet along with minced garlic and sauté until golden brown.
  2. Gradually add flour, stirring until combined. Slowly pour in heavy cream and whole milk, stirring constantly.
  3. Whisk in the egg yolk to enrich the flavor and texture before it thickens.
Add Cheese
  1. Incorporate grated Parmesan cheese, whisking until melted.
  2. Adjust thickness with reserved pasta water if necessary.
  3. Taste and adjust salt if needed.
Combine Everything
  1. Reduce heat and add cooked shrimp and fettuccine to the skillet, tossing gently to coat.
  2. Serve immediately, garnished with parsley and more Parmesan if desired.

Notes

For an extra touch, consider adding red pepper flakes. Use large, fresh shrimp for best results. A squeeze of fresh lemon juice before serving brightens the dish.
