  • 1 Lemon Zesty and juicy.
  • 150 g Greek Yoghurt Creamy and rich.
  • 15 g Fresh Dill Aromatic and herbaceous.
  • Olive Oil For drizzling and cooking.

Method

Preparation
  1. Preheat your grill to high.
  2. In a large bowl, mix the beef mince with the rose harissa paste and cumin seeds. Grate in the garlic and season with salt and black pepper. Mix well.
  3. Divide the beef mixture into four portions. Spread one portion on each flatbread, pressing it right to the edges. Drizzle olive oil over them and set aside.
  4. Drain the roasted red peppers and slice them thinly. Slice the white onion using a mandolin and soak the slices in a bowl of ice water.
  5. Combine the sliced peppers and onions in a bowl. Zest the lemon over the mixture and squeeze half the lemon juice on top. Season with salt and drizzle with olive oil.
Cooking
  1. Place the flatbreads under the preheated grill on the middle shelf. Grill for 5-7 minutes until the minced beef is cooked through.
  2. Once grilled, drain the onions from the ice water. Spread Greek yogurt on each flatbread, then top with the roasted pepper and onion salad. Finish with fresh dill.
  3. Serve with lemon wedges for added zing.

Notes

For an extra layer of flavor, consider adding spices like paprika or coriander to the beef mixture. Experiment with different types of flatbreads to vary textures.
